Molten Chocolate Lava Cake

Type of chocolate: Le Noir 61% Baking Baror Le Noir 68% or Caraibe 66%
Makes 8 servings

Ingredients

4 oz Valrhona Le Noir 61% or Le Noir 68% or Caraibe 66% (Valrhona Dark Chocolates)
8 oz butter
2 whole eggs
1/2 cup sugar
1/2 cup flour
8 chocolate truffles or ganache candies


Preparation & Assembly

  1. Melt the chocolate and the butter in the microwave or in a bowl over a pot of simmering water (How to temper chocolate)
  2. Blend together the whole eggs and the sugar for 3 minutes. (Be careful not to over-beat the eggs)
  3. Carefully stir the chocolate and butter into the frothy eggs then add the sifted flour.
  4. Line 2 inch molds with parchment paper (Or use non stick spray and dust with flour)
  5. Fill the molds halfway up with chocolate mixture, then place a chocolate truffle or candy in the middle of the batter and cover with more of the chocolate mixture
  6. Bake for 15 minutes at 375F degrees

Chefs tips:
Serve with a touch of whipped cream
