Class Description: Sign up for this online class with l’École Valrhona Chef Guillaume Roesz to share his enthusiasm and expertise in fine chocolate and pastry! Join Chef Roesz to learn new techniques and how to create beautiful and flavorful tarts. Class will focus on exploring tarts as a unique way to express flavors, textures, and design. You will learn how to decorate tarts with chocolate décor you can recreate in your kitchen as well as how to incorporate seasonal touches in your finished dessert. Chef Roesz will also teach you how to create distinctive combinations of classic and modern flavors to use in your desserts, with a focus on local and seasonal ingredients. A portion of the class will focus on how to work with alternative ingredients and adapt recipes for dietary restrictions, such as vegan, dairy-free, and gluten-free.
