STRAWBERRY INSPIRATION SCONES

INGREDIENTS

STRAWBERRY INSPIRATION Scones
6 cup all-purpose flour
1 cup sugar
3 Tbsp baking powder
2 Tbsp salt (kosher)
1 1/2 cup butter (cold, cubed)
1 ea egg
2 cup heavy cream
 
Egg Wash
1 ea egg
1/8 cup heavy cream
 
STRAWBERRY INSPIRATION Spread
8 oz strawberries (chopped)
2 Tbsp sugar
2 Tbsp lemon juice
 
Whipped Crème Fraiche
1 cup crème fraiche
1 1/2 cup heavy cream
1/3 cup sugar
 

INSTRUCTIONS

STRAWBERRY INSPIRATION Scones

  • Sift together the flour, sugar, baking powder and salt.
  • Cut the butter into the dry sifted ingredients (like making pie dough).  Do not over mix. Add the egg, cream and STRAWBERRY INSPIRATION and stir just to combine.
  • Divide the dough into 24 pieces and shape into rounds 1.5” thick. 
  • Separate onto 2 baking pans lined with parchment paper.
  • Whisk together 1 egg and 1/8 cup cream to create the egg wash. Brush the scones with egg wash then prinkle with raw sugar or sanding sugar if desired.
  • Bake in a preheated oven at 400°F (204°C) for about 15 minutes (rotating as needed).

STRAWBERRY INSPIRATION Spread:

  • Place the strawberries and sugar in a saucepan. Cook on medium-low heat until it boils and slightly thickens.
  • Remove from the heat and add the  STRAWBERRY INSPIRATION.
  • Use an immersion blender to mix.
  • Allow to cool and store in the refrigerator until ready to use.

Whipped Crème Fraiche:

  • Place the crème fraiche, cream, and sugar into a stand mixer.
  • Whip until light and creamy (do not over whip).
  • Store in refrigerator until ready to use.
