Location: Class will be held on Zoom, the link to join will be emailed to you within 24 business hours (weekdays, 9am-5pm EST) of class purchase. You will also receive a reminder email with the link to join the Friday before class, the day before class and 30 minutes before class starts. The link to join the class cannot be shared.

Recorded Session: To purchase, in lieu of the live session, students can purchase the class recording. $35 for the recorded session.


Class includes: Live Session: Class recipe book and a 20% discount code for our online boutique will be sent the Friday before class starts. All live sessions feature the opportunity to ask questions via chat box throughout the class and additional time is set aside at the end of class for a Q&A session. The class recording will be sent the day after class.

Class Description:

Get your Fall baking on with Valrhona North America Executive Pastry Chef Guillaume Roesz! Celebrate the flavors of Fall with creations that will delight your friends and family at your next gathering. Recipes featured in this class include:
• Pecan Tart: Pecan Praliné Pressed Shortcrust, Pecan Praliné Cremeaux, Opalys White Chocolate & Vanilla Whipped Ganache, Candied Pecan Topping
• Pumpkin Travel Cake: Pumpkin Pound Cake, Milk Chocolate Filling

Chef Bio: 

Following his pastry apprenticeship in Guebwiller, a small city in Alsace, Chef Guillaume Roesz arrived in Paris in 2006 to work for Maison Ladurée.
After earning his stripes five years later, he embarked on a new journey to the Middle East to open three shops for Maison Ladurée in Doha and Dubai.
Chef Guillaume ended up conquering the Middle East’s heart’s by working for Valrhona in Dubai. Through traveling from South Africa to the Indian Ocean, including MENA, Guillaume built up his credibility and reputation thanks to his deep knowledge of fine French pastry and chocolate.
Today, Chef Guillaume is a part of the Valrhona North America team as the North America Executive Pastry Chef, he looks forward to sharing his French pastry and chocolate skills while perfecting his Yankee accent!
