ONLINE CLASS: A MODERN TWIST ON TARTS

Location: Class will be held on Zoom, the link to join will be emailed to you within 24 business hours (weekdays, 9am-5pm) of class purchase. You will also receive a reminder email with the link to join the day before class and 30 minutes before class starts. The link to join the class cannot be shared.

Recorded Session: To purchase, in lieu of the live session, students can purchase the class recording. $35 for the recorded session. Students will also receive a discount code for 20% off your next purchase on our online boutique.



Class includes: Live Session: Class recipe book will be sent the Friday before class starts. The class recording will be sent 24 hours after class has concluded along with a 20% discount code to use for your next purchase on our online boutique. All live sessions feature the opportunity to ask questions via chat box throughout the class and additional time is set aside at the end of class for a Q&A session.

Class Description:

Sign up for this online class with l’École Valrhona Chef Guillaume Roesz to share his enthusiasm and expertise in fine chocolate and pastry! Join Chef Roesz to learn new techniques and how to create beautiful and flavorful tarts. Class will focus on exploring tarts as a unique way to express flavors, textures and design. You will learn how to decorate tarts with chocolate décor you can recreate in your kitchen as well as how to incorporate seasonal touches in your finished dessert. Chef Roesz will also teach you how to create distinctive combinations of classic and modern flavors to use in your desserts, with a focus on local and seasonal ingredients.  

A portion of class will focus on how to work with alternative ingredients and adapt recipes for dietary restrictions, such as vegan, dairy-free, and gluten-free.

Objectives:

  • Use seasonal fruits, spices, and Valrhona chocolate to produce special fillings such as caramel, crémeux, compote, etc.
  • Master proper dough technique for the perfect tart base.
  • Learn innovative finishing techniques and practice making chocolate décor to make your tarts unforgettable.
  • Understand the role a single ingredient plays in the balance of the final dessert.

Chef Bio: 

Chef Guillaume Roesz began his career with a pastry apprenticeship in Alsace, France at Pâtisserie Dany Husser. In 2006, Guillaume moved to Paris to join the prestigious team at Maison Ladurée. Five years later, Guillaume embarked on a new journey, this time to the Middle East, to open three shops for Maison Ladurée in Doha and Dubai.
In 2015, Chef Roesz joined the Valrhona Team as the Middle East, Africa & South Asia Corporate Pastry Chef, bringing his expertise in pastry and passion for Valrhona chocolate. Chef Roesz joins the team providing technical support to distributors and end users, teaching hands-on classes and demonstrations, developing recipes for professionals and consumers, testing and developing new techniques, working on new trends as well as implementing best practices from L’École Valrhona’s headquarters.
