Location: Class will be held on Zoom, the link to join will be emailed to you within 24 business hours (weekdays, 9am-5pm) of class purchase. You will also receive a reminder email with the link to join the day before class and 30 minutes before class starts. The link to join the class cannot be shared.

Recorded Session: To purchase, in lieu of the live session, students can purchase the class recording. $35 for the recorded session. Students will also receive a discount code for 20% off your next purchase on our online boutique.


Class includes: Live Session: Class recipe book will be sent the Friday before class starts. The class recording will be sent 24 hours after class has concluded along with a 20% discount code to use for your next purchase on our online boutique. All live sessions feature the opportunity to ask questions via chat box throughout the class and additional time is set aside at the end of class for a Q&A session.

Class Description:

Join this online class with chocolate expert Nicolas Botomisy to learn how to create delicious vegan chocolate treats! Chef Nicolas will show you how to make a chocolate snacking bar with multiple layers, all with vegan ingredients. You will also learn how to make a vegan molded bonbon made with Valrhona Inspiration Almond.

An expert in all thing’s chocolate, Chef Nicolas will answer all your chocolate questions and offer solutions for common mistakes in chocolate confection making. He will make you feel confident to create vegan chocolate treats and show you how to put your own twist on the recipes. Don’t miss out on this fun and informative vegan chocolate confections class! Chef Bio: 

Chef Nicolas Botomisy started his career in the south of France at Relais de la Poste where he developed his attention to detail and knowledge of taste, plate presentation, and texture. He then moved to the UK and Paris where he worked for 2 and 3 Michelin-starred restaurants such as Four Seasons Hotel George V, Carré des feuillants, and the Waterside Inn. It is in 2012 that Chef Botomisy started working for Valrhona as Pastry Chef at L’École Valrhona Tokyo, Japan where he deepened his passion for fine pastries and sense of creativity. Chef Botomisy started a new chapter in his career in 2016 when he moved to the US as the L 'École Valrhona Pastry Chef, North America. Onto a new challenge in 2018, Chef Botomisy is opening a chocolate shop in Tokyo, Japan, and consulting around the world.
